Rustic Pizza Margherita


This is probably our favorite pizza... flavorful, colorful and healthy.  Although I'm sure our son will vouch for simple cheese pizza.

What's great about this pizza is you can make the dough and the pizza sauce ahead of time, like say... over the weekend.  Then on one of those busy weeknights, just put all the ingredients together, pop it in the oven and... Voila, a delicious pizza for the whole family to enjoy!

Ingredients:
  • 1 Healthy Pizza Dough
  • 1 1/4 cup Homemade Pizza and Pasta Sauce
  • 1 tablespoon cornmeal
  • 1 to 1 1/2 cups shredded mozzarella cheese
  • 1 medium vine ripened tomato (thinly sliced)
  • 1 small yellow bell pepper (thinly sliced) (optional)
  • garlic powder, salt and pepper to taste
  • a few basil leaves
  • 1 tablespoon extra virgin olive oil
Directions:
  1. Preheat the oven to 450 degrees F.
  2. Sprinkle cornmeal on a large pizza pan (or cookie sheet).  Transfer the Healthy Pizza Dough to pizza pan.  Press down gently on the dough until it reaches the edges of your pan.  The dough should be about half an inch thick.
  3. Spread Homemade Pizza and Pasta Sauce on the dough.  Top with mozzarella cheese, then sliced tomatoes and bell pepper.  Sprinkle with garlic powder and salt and pepper to taste.
  4. Bake in preheated oven for 12-15 minutes.
  5. Garnish with fresh basil leaves.  Drizzle with olive oil before serving.
* The cornmeal will prevent the pizza dough from sticking to the bottom of the pan.  Sprinkle your hands and the dough with flour if you find if too sticky to handle as you shape the dough on the pan.
